After waking up late this morning, the missus surprised me with the revelation that she had made Eggs in the Hole for herself for breakfast. She’s normally a toast, yogurt, and coffee for breakfast person, so needless to say, I was both curious and impressed when she offered to make one for me.
EGGS IN THE HOLE
- 4 tbsp olive oil, divided
- 2 slices bread
- 2 eggs
- 1 slice Canadian bacon or ham
- Shredded cheese
- Cholula (or other hot sauce)
Heat 2 tablespoons of olive oil in pan over medium heat. With a cookie cutter or other round shape, cut out centers of bread slices (you can munch on these if you want). Place bread in pan and toast lightly on both sides. Once toasted, drop heat to medium-low and crack eggs into centers of bread. Cook for 5 minutes. Carefully flip each slice over with a large spatula. Cook for 3 more minutes. Remove from pan and set aside.
Scrape out bits in pan and return to medium heat. Add remaining 2 tablespoons of olive oil. Add ham to pan; dust with paprika and brown both sides. While browning, sprinkle one slice of bread with shredded cheese of your choice. Drizzle with hot sauce. When done, remove ham from pan and place on cheesed bread. Top with other slice. Serve immediately. Enjoy!
