Mushroom Sloppy Joes

There are a gazillion ways to make sloppy joes. It has three basic parts: meat, extras, and sauce. It’s one of those dishes that’s easy to learn, but difficult to master. Here’s my latest and tastiest to date:

MUSHROOM SLOPPY JOES

  • 1 tbsp olive oil
  • 1 lb ground beef (85/15 mix)
  • 12-16 oz cremini mushrooms, finely chopped
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • ½ cup tomato paste
  • 1 tbsp oregano
  • 2 tbsp Worcestershire sauce
  • 2 tbsp red wine vinegar
  • 1 tbsp molasses
  • ¼ tsp Kosher salt
  • ½ tsp ground black pepper
  • ½ tsp Cholula

In a large skillet, heat olive oil over medium-high heat. Add beef and crumble into small bits. Cook until completely cooked through, crumbling as it browns. Once browned, add onion, mushrooms, and garlic. Cook until onions are tender. Add tomato paste, oregano, Worcestershire sauce, vinegar, molasses, and salt. Stir thoroughly. Cook for five minutes (until mushroom are tender). Add pepper and hot sauce. Cook until sauce reaches desired thickness. Remove from heat and enjoy.

Makes 4-6 servings.
