I know it’s a bit too hot outside for some people out there to have a warm bean dish, but there’s a place in my heart for some tasty smoked sausage.
SMOKED SAUSAGE AND BLACK BEANS
2 tbsp olive oil
1 package (12-16 oz) smoked sausage
3 large carrots, diced
2 shallots, chopped
Sea salt and pepper to taste
2 cloves garlic, minced
1 can chicken broth
2 cans black beans, drained and rinsed
3 tbsp minced parsley
In a large skillet over medium-heat, warm olive oil. Add sausage and cook until crispy. Once done, remove from pan and set aside. Saute carrots and shallots in skillet until slightly tender, about 4 minutes. Season with salt and pepper to taste. Add garlic and cook until fragrant, about 1 minute. Add beans and broth, and bring to a boil. Add sausage. Cook at a rapid simmer until carrots are at desired tenderness, about 10-12 minutes. Remove from heat and stir in parsley. Serve in a bowl with a dollop of sour cream. Enjoy!
