Jo Jo Fries

Anyone from the Midwest can attest to the awesomeness of jo jo fries–little potato wedges breaded and cooked until both delightfully crispy and enigmatically fluffy. They take a little time to cook, but in the end, they’re totally worth it.

JO JO FRIES

2 tbsp butter
2 whole baking potatoes
1 cup bread crumbs
1/2 cup grated Parmesan cheese
3 tbsp red curry
3 tbsp Mrs. Dash Extra Spicy

Start preheating the oven to 350 degrees F.  While oven is still getting ready, melt butter and brush onto rimmed baking pan. Place pan in oven while it’s still preheating. Cut each potato in half along its fattest dimension. Cut each half into three equal-sized wedges. In a one-gallon resealable bag, combine bread crumbs, Parmesan, curry, and Mrs. Dash seasoning. Add potato wedges to bag, seal and shake until each wedge is well-coated. Once oven is preheated, remove pan and place each wedge flesh side down. Bake at 350 for 30 minutes then flip each wedge to the other non-skin side. Cook for 30 minutes more. Remove from oven and season with sea salt.

Makes 2 servings of 6 wedges apiece. Enjoy!
