Baked Potato Bread Sandwiches

If there’s one food that I clamor to most, it’s cheese (hence the name). There is a time-honored American tradition of melting said delicious food product between two slices of extra squishy Wonder bread. But why don’t we fancy up a bit? Not a lot, but just a bit. Potato bread offers the chance to make a sturdier sandwich without losing the texture of the original.


8 slices potato bread
8 slices sharp cheddar cheese
8 slices bacon, cooked crispy
4 green onions

Preheat oven to 375 degrees F. Line a baking pan with aluminum foil. Give four pieces of the potato bread a thin layer of butter and place buttered-side down on the foiled pan. Place a slice of cheddar on each piece of bread. Put two slices of bacon on each piece of bread. Clean and trim the green onions down to the length of a piece of the bread. Slice each in half lengthwise and place two halves on each slice of bread. Top each with another slice of cheddar. Butter the remaining slices of bread and top each sandwich (buttered-side up). Bake for 10 minutes, then flip, then bake for 10 minutes more. Serve immediately.

Makes 4 sandwiches. Enjoy!
