Cumin Pork Chops / Caramelized Mashed Potatoes

We’ve been on quite a exploration of cuisine this week. First Thai, then Mexican, now a bit of Fusion. I had a little extra time for dinner tonight, so I offer you a double helping of recipe goodness. It’s a take on a simple Midwestern meat and potatoes, with a little flair. I hope you like it.


2 thick-cut center loin pork chops, butterflied
1 tbsp cumin
1 tbsp brown sugar
½ tsp hot smoked paprika
¼ tsp kosher salt
¼ tsp ground black pepper

Heat grill to medium-high. Combine spices will in a small bowl. Rub into both sides of pork chops. Grill for 5 minutes on each side.

Makes 2 servings.


4 tsp olive oil
2 medium Vidalia onions, chopped
3 lbs new gold potatoes
1 cup buttermilk
4 tbsp butter
Salt, pepper, and seasoned salt to taste

Quarter potatoes and place in a large pot. Fill with enough water to cover potatoes. Set on a burner; set heat to a high boil. Meanwhile, heat olive oil in large skillet over medium-high heat. Once heated, stir in onion and cook for 15 minutes, stirring frequently. Once water is boiling, lower to a simmer and cook potatoes for 15 minutes, until tender. Once the onions are golden brown and sweet (remember to taste them), remove from heat and set aside. Once potatoes are tender, drain and return to pot. Add buttermilk, butter, and seasonings. Mash until desired consistency. Add onions and incorporate thoroughly.

Makes 6-8 servings.
