Burrito Pie

Here’s another one from this weekend and was an “oldie but goodie.” It’s actually a way to make Mexican food for people who claim not to like Mexican food. [Note: For this recipe, you will need a round casserole dish into which the tortillas can just fit. Any smaller, and you will have leftover filling and a too-small pie; any bigger, and the dish will not cook right.]


1 lb ground beef
1/2 onion, chopped
1 tsp minced garlic
2 jalapenos, seeded and minced
10 oz diced tomatoes
16 oz refried beans
16 oz medium taco sauce
6 medium (8-in.) tortillas
8 oz shredded Colby cheese

Preheat oven to 350 degrees F. In a large skillet, saute ground beef over medium heat for 5 minutes, stirring to crumble. Add onion and garlic and saute for 5 more minutes, stirring occasionally. Drain off or spoon out excess fat if necessary. Add jalapenos, tomatoes, taco sauce, and refried beans. Stir mixture thoroughly, reduce heat to low, and simmer for 20 minutes, stirring occasionally.

When done, spread a very thin layer of the mixture into the bottom of a deep round casserole dish. Cover with a tortilla. Spread a layer of the meat mixture on top of the tortilla, then an ounce or two of the cheese. Continue layering with a tortilla, then some meat, then some cheese until all the tortillas are used, finishing with a layer of meat, then cheese.

Bake in oven for 25 minutes or until cheese is bubbly.
