Beef Burgers with Ancho Ginger Sauce

Last night:

“What do you want for dinner tomorrow?” (says I)
“I want bad-ass burgers.” (says she)

1 onion, chopped
1 tbsp minced ginger
2 cloves garlic, minced
1 cup tomato puree
2 tbsp ketchup
1 tbsp red wine vinegar
1 tbsp Worcestershire sauce
1 1/2 tbsp mustard
2 tbsp honey
2 tbsp molasses
3 tbsp ancho chile powder (very important)
1/2 cup water
2 tbsp olive oil
4 hamburger buns
1.5 lbs ground sirloin
Salt and pepper
4 slices sharp cheddar
Tomato and lettuce

In a pot heat 1 tablespoon of the olive oil over medium heat. Add onion and ginger and saute for 5 minutes, stirring frequently. Add garlic and cook for 1 minute, stirring to incorporate. In a small mixing bowl, whisk together tomato puree, ketchup, red wine vinegar, Worcestershire sauce, mustard, honey, molasses, chile powder, and water. Add mixture to pot and mix thoroughly. Simmer for 30 minutes.

Meanwhile, preheat grill. Combine ground beef with salt and pepper to taste and form into four patties. When grill is hot and there are 12 minutes left on the sauce, brush buns with remaining oil and toast on grill for 30-60 seconds. Remove from grill and set aside. Grill burgers for 3-4 minutes a side. When done, place a slice of cheese atop each burger and close grill lid. Sweat and melt for 1 minutes. Remove burgers from grill and set aside to rest.

When sauce is done, pour into blender and puree with mostly smooth. When done, pour into serving bowl. Assemble burger by spreading sauce over bottom bun, topped with a burger patty, then lettuce and tomato.
