Slow Cooker White Bean and Kielbasa Stew

Even though this winter has been mild in West Virginia, we still wanted a nice, warm soup to comfort us. It also helps that this is ridiculously easy to make.

WHITE BEAN AND KIELBASA STEW

16 oz dry great northern beans
16 oz kielbasa, sliced into half-moons
1 medium yellow onion, diced
5 cloves garlic, minced
4 cups chicken broth
1 can diced tomatoes
1 tsp dried rosemary
6 cups fresh spinach

In a 5-quart slow cooker, combine kielbasa, beans, onion, garlic, broth, rosemary, and broth. Cook on low for 6 hours or until beans are tender. Stir in and wilt spinach before serving.

Makes 6 servings. Enjoy!
