Penne with Sausage and Squash

So, it’s been a while since I did a pasta dish here, and somehow I keep doing plates with sausage. I can’t help it—sausage and pasta go so well together.


  • 1 lb penne
  • 2 tbsp olive oil, divided
  • 1 lb hot Italian sausage
  • 1 red bell pepper, julienned
  • 2 pints grape tomatoes, halved
  • 1 yellow squash, sliced
  • Parmesan cheese

Start a large pot of salted water boiling. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Brown and crumble sausage until done. Once water is boiling, add pasta and cook until desired doneness. When sausage is done, remove from pan with slotted spoon and set aside. Add bell pepper to pan and cook until slightly charred and softened, stirring occasionally, about 6 minutes. Add squash, tomatoes, and ¼ cup of the pasta water to skillet and cook for 4 minutes, stirring frequently. Drain pasta when done. Once squash is tender, add sausage to pan and heat through. Once heated, add mixture to pasta. Stir in cheese until pasta is slightly coated. Serve in bowls with additional cheese if desired.

Makes 6 servings. Enjoy!

    I’ve had pasta with sausage and pasta with squash but I’ve never even thought of the combination of the two together. Sounds fantastic though, I’ll definitely try that out soon. Thanks for the idea!
