Proscuitto Grilled Pizza

It’s a wonderful thing when you discover a new dish that’s relatively easy to make and has countless possibilities. Grilled pizza, while requiring a light touch, is also a great way to entertain guests.


  • 1 package frozen pizza dough, thawed
  • 3 tbsp olive oil, plus one more for cooking
  • 4 tbsp pizza or tomato sauce
  • 6 oz sliced mushrooms
  • 6-8 leaves basil, minced
  • ¼ medium onion, sliced
  • 2 oz prosciutto, chopped
  • 6 oz ciliegine mozzarella, drained and halved

Preheat outdoor grill to medium-high heat. In a skillet, heat extra tablespoon of olive oil. Add mushrooms and onion and sauté until tender. Set aside when done. With a rolling pin, roll out pizza dough until slightly thin. Place dough on grilling surface and cook for 2-3 minutes, until lightly charred. Remove from grill and flip over. On the cooked side, brush on olive oil. Top with sauce, then basil, mushrooms, onion, prosciutto, and lastly, mozzarella pieces. Place pizza back on grill and cook with the lid closed for 3-4 minutes, until cheese is melted and bottom is cooked. Remove from grill and allow to cool for five minutes. Slice into pieces.

Makes 3-4 servings. Enjoy!
