Beer Cheese Burgers

While a good slice of sharp cheddar goes wonderfully on top of a hot burger, sometimes you have to turn into a sauce so you can get the full creamy, gooey effect. Add a little kick of horseradish and you got yourself a winner.

BEER CHEESE BURGERS

  • 1.5 lb ground beef
  • Kosher salt and pepper
  • 1 tbsp soy sauce
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp mustard powder
  • 3/4 cup beer
  • 1/2 cup half and half
  • 3/2 cup shredded sharp cheddar
  •  2 tbsp horseradish sauce
  • 4 slices beefsteak tomato
  • 1 tbsp minced chives
  • 4 buns

Preheat grill to medium-high heat. In a mixing bowl, knead together ground beef, salt, pepper, and soy sauce. Form into four patties.

To make the sauce: in a saucepan, melt butter over medium heat. Stir in flour and mustard powder. Cook for 2 minutes, stirring constantly. Add beer and whisk together, continuing to whisk and cook for 1-2 minutes until slightly thickened. Add half and half, cooking and whisking for another minute or so. Whisk in cheese and horseradish sauce. Cook and whisk until thickened to desired consistently. Remove from heat, cover and set aside.

Cook burger patties on grill to desired doneness. When done, cut buns in half and place burgers on the bottom half of each bun. Top with cheese sauce, then chives, tomato slice, and the top bun.

Makes 4 servings. Enjoy!
