Shrimp and Sausage with Tomatoes

This dish has all the good parts of dirty rice plus all the good parts of a Hungarian goulash. This seemed like a simple melange of commonplace ingredients, but became much more. Also, it gets better the next day (trust me).


  • Olive oil
  • 1 lb mild Italian sausage
  • 1 sweet onion, sliced
  • 28 oz fire-roasted diced tomatoes
  • 20-24 medium shrimp
  • 1 cup frozen peas

Heat olive oil in a large skillet over medium-high heat. Cook sausage in skillet, crumbling with wooden spoon. Once cooked, add onion and saute until almost tender. Deglaze skillet with tomatoes (with sauce), and stir to incorporate. Add shrimp and peas and cook until shrimp are cooked through. Once done, serve over rice.

Makes 4-6 servings. Enjoy!
