Buffalo Burgers with Balsamic Ketchup

There’s burgers and fries, and then there’s BURGERS AND FRIES. We decided that every part of this meal had to be home-made, right down to the ketchup. So, we did just that.

First up: BALSAMIC KETCHUP

  • 1 tbsp olive oil
  • 2 pinches kosher salt
  • 2 lbs small tomatoes, quartered
  • 3 tbsp chopped fresh basil
  • 2 tsp balsamic vinegar
  • 1/2 tsp sugar
  • 1/4 tsp ground red pepper

Preheat oven to 325 degrees F. In a large bowl, toss together tomatoes, oil, and a pinch of salt. Arrange on a wire rack in a jelly roll pan. Bake in oven for 3 hours. When done, allow to cool and remove skins. Discard skins. In a food processor, combine tomatoes, another pinch of salt, basil, vinegar, sugar, and red pepper and process until smooth. Store for later use.

Followed by: BUFFALO BURGERS

  • 1 tbsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 lb ground buffalo
  • 1/4 cup grated Parmesan cheese
  • 4 buns
  • 1 cup baby arugula
  • Thinly sliced red onion

Preheat grill to medium-high heat. In a large bowl, combine buffalo, Parmesan, salt, pepper, and olive oil. Knead to incorporate fully. Form into four patties. Brush grill grates with more oil. Grill patties to desired doneness. Remove from heat. On the bottom half of each bun set some arugula and a red onion slice. Top with burger and spread with balsamic ketchup (from above). Makes 4 servings.

And to finish up: PARMESAN GARLIC FRIES

  • 4 large potatoes
  • 2-3 tbsp olive oil
  • 2 tbsp butter
  • 1 clove garlic, minced
  • Pinch of kosher salt
  • 1/3 cup shredded Parmesan cheese

Preheat a roasting pan and oven to 450 degrees F. Wash and peel potatoes. Slice into quater-inch matchsticks. Toss with olive oil. Arrange in pan and bake in oven for 5 minute. Increase heat to broil and bake for 20 more minutes, turning once. When done, melt butter in a large skillet over medium heat and saute garlic for 30 seconds. Add fries and cook for another minute. Place in a large bowl and toss with salt and Parmesan. Makes 4 servings.

Yeah, it was awesome.
