Cheeseburger Burrito Paninis

Thousands of well-conditioned athletes from every nation on the planet have converged on the place where time zones are defined to compete feats of strength, skill, speed, and agility, and what do I make? Ground meat melted with cheese in a burrito-sized tortilla. And with every bite, I flaunt the caloric goodness at the TV screen.

CHEESEBURGER BURRITO PANINIS

  • 1 lb ground beef
  • 1 1/2 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp dried minced onion
  • Salt and pepper
  • 2 plum tomatos, sliced thin
  • 1 cup finely shredded cheddar
  • Yellow mustard
  • 4 burrito-sized flour tortillas
  • Long-sliced pickles (optional)

In a large skillet, cook ground beef over medium-high heat, crumbling well and stirring in onion, Worcestershire sauce, and ketchup. Season with salt and pepper to taste. Cook until beef is completely browned. When done, allow to cool slightly. To prepare each panini, lay out a flour tortilla. Sprinkle a 1/4 cup of cheese into the center rectangle of each tortilla. Spoon a quarter of the beef mixture atop the cheese. Drizzle with mustard. Place a layer of 3-4 tomato slices on top. (Place a few pickle slices on top if you want.) Roll tortilla like a burrito and place, seam down, on an indoor grill. Close grill and cook for 4-6 minutes until outside is well grilled. Repeat with each tortilla.

Makes 4 servings. Enjoy!
