Some meals are just too comforting. This dish, will I felt absurd making it, drove me to a second, painful helping. It’s all the best parts of a pizza combined with the hominess of a dish of dumplings.
PEPPERONI AND MUSHROOM BUBBLE PIZZA
- 2 tbsp olive oil, divided
- ½ onion, sliced thin
- 8 oz mushrooms, chopped
- 2 packages canned biscuits
- 40 slices pepperoni, quartered
- 15 oz. pizza sauce
- 2 cups shredded mozzarella cheese
Preheat oven to 375 degrees F. In a saute pan, heat half the olive oil over medium heat. Saute onion until tender. Remove from pan and add mushrooms and remaining oil. Cook until tender. Quarter all the biscuits. In a large mixing bowl, combine biscuit pieces, cooked onion, mushrooms, pepperoni, pizza sauce, and 1 cup of the cheese. Mix thoroughly. Spray a 9×13 baking dish with cooking spray. Pour pizza mixture into dish and pat to make even. Top with remaining cheese. Bake in oven for 25 minutes.
