Cajun Honey Pork Tenderloin

This is one of those meals where I kept making each bite smaller and smaller just so I could savor it a little while longer. Only six ingredients—that’s all you need sometimes.

CAJUN HONEY PORK TENDERLOIN

  • 1½ lbs pork tenderloin
  • 4 tbsp butter
  • 2 tbsp honey
  • 1 tsp Cajun seasoning
  • 1 tsp fresh ground black pepper
  • ¼ cup water

Preheat oven to 375 degrees F.

In a oven-safe pot, melt butter and honey over medium-high heat and whisk together. While melting, season pork with Cajun seasoning and pepper. Sear tenderloin in pot, browning all sides, about 5 minutes. When done, place whole pot to roast in oven, uncovered, for 20 minutes.

Remove from oven and allow to rest on a cutting board, covered loosely with foil. While resting, add water to pot juices. Scrape up browned bits and reduce over medium-high heat, whisking until slightly thickened.

Serve sliced with sauce spooned over along side your favorite grain.
