Valentine’s Day: BBQ Pulled Pork with Corn Waffles

Well, folks, it’s Valentine’s Day, or as we call it at the cheese casa, “Thursday.” We do neither flowers nor chocolates nor cheesy rendezvous; what we do do is a comfortable night in. There’s nothing like cooking a meal together, especially since she studies herself silly these days. So, I took care of the meat and the missus cooked up the delicious waffles.



  • 4 pork loin chops
  • 15 oz. tomato sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ¼ cup honey
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp cinnamon
  • 1 box Jiffy corn muffin mix
  • 1¼ cup milk
  • 2 tbsp butter, melted
  • 2 eggs
  • ¾ cup shredded cheddar
  • 2 tbsp frech corn kernels
  • 2 tbsp green onions, sliced

In a mixing bowl, combine tomato sauce, vinegar, garlic powder, onion powder, honey, cumin, chili powder, and cinnamon. Whisk together well. Pour mixture into a 4 to 5 quart slow cooker. Place pork chops in sauce. Cook in slow cooker for 6-8 hours on low.

When done, remove from slow cooker and shred in sauce. Set aside and keep warm.

In another bowl, whisk together Jiffy mix, milk, melted butter, eggs, and cheddar. Heat waffle maker. Pour mixture into waffle maker and make four separate waffles. Plate waffles topped with shredded pork and garnished with corn kernels and green onions.

Makes 4 servings. Enjoy!
