Zucchini Gnocchi with Grilled Chicken

So it’s a little while since I’ve posted, but this one was too good to pass up. It has a nice balance of protein, starch, and vegetables. Which sometimes, is the best thing you can ask for in a meal. Also, if you’re a vegetarian, all you have to do is leave out the chicken.

ZUCCHINI GNOCCHI WITH GRILLED CHICKEN

  • 2 chicken breasts, halved lengthwise
  • 1 lb frozen gnocchi
  • 2 tbsp butter
  • 2 shallots, diced
  • 3 zucchini, peeled into ribbons
  • 1 pint cherry tomatoes, halved
  • ½ tsp salt
  • ¼ tsp nutmeg
  • Ground pepper to taste
  • ½ cup grated Parmesan cheese

Preheat grill. Season chicken with salt and pepper. Cook chicken on grill until cooked through, 3-4 minutes a side, flipping once. When done, allow to rest for a bit, then chop into pieces.

Start a large pot of salted water boiling. When at a boil, add gnocchi and cook until done.

Heat high-sided skillet to medium-high. Add butter and melt until brown. Add shallots and cook for 3 minutes until soft. Add zucchini, tomatoes, salt, nutmeg, and pepper. Cook for 2-3 minutes. Add Parmesan and mix in. Add cooked gnocchi and chicken and toss to coat.

Makes 4 servings. Enjoy!
