Garlic Parmesan Grilled Tomatoes

Sometimes the simplest things can make a great side dish. You don’t need elaborate oils, special vegetables, or fancy herbs. This time, less is more.



  • 8 roma tomatoes, halved
  • 6 tbsp olive oil
  • 6 cloves garlic, crushed well
  • ¼ tsp dried thyme
  • ¼ cup grated Parmesan

Preheat outdoor grill to medium-high heat.

In a small skillet, heat olive oil over medium-high heat. Add garlic cloves and thyme. Stir frequently and flip cloves as they turn golden brown on each side. When crispy, remove from oil and set on a cutting board to cool. Remove pan from heat and stir in Parmesan until a paste forms. Scoop into a small mixing bowl. Mince cooled garlic finely. Add garlic to Parmesan mixture.

Place tomato halves on grill cut side down for 2 minutes. Flip over and spoon a small amount of Parmesan mixture onto each tomato. Gril for another few minutes until skin begins to peel from sides. Serve immediately.

Makes 4 servings. Enjoy!
