Chili Sauce Chicken Skewers

Turns out it’s Grill Week here at saladcheese. From sausages to tomatoes to today’s wonderful skewers to the pizzas I’m making tomorrow. I’m even doing grilled cheese sandwiches in a few days.

Tonight’s dinner is a nice jaunt into pseudo-Asian party food. You can make a bunch of these for a cookout and fashion a bunch of different mixes of varying spiciness to accommodate taste levels.

  • 1 red bell pepper, chopped
  • 1 sweet onion, chopped
  • 2 chicken breasts, cubed
  • 3 tbsp olive oil
  • Salt and pepper
  • ¼ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 10 drops sriracha

Preheat outdoor grill.

In a bowl, place onions and peppers. Toss with half the oil and some salt and pepper. Place on grill skewers. In the same bowl, toss chicken with the rest of the oil and more salt and pepper. Place them on separate skewers. In a new bowl, whisk together mayo, chili sauce, and sriracha. Grill skewers, turning occasionally, until chicken is cooked through. Brush sauce mixture onto chicken skewers on all sides. Let grill for another minute until sauce sets. Serve immediately.

Makes 2 servings. Enjoy!
